Fluffy Pumpkin Cheese

DELICIOUS PUMPKIN CHEESECAKE


Ingredients

  • 1 1/2 cups graham cracker crumbs or gingersnap crumbs
  • 1 tablespoon sugar
  • 5 tablespoons butter, melted
  • 24 ounces cream cheese
  • 1 cup sugar
  • 1 teaspoon Vanilla Extract
  • 3 eggs
  • 1 cup cooked or canned pumpkin
  • 1 teaspoon pumpkin spice 
  • whipped cream

Directions 

  1. Combine first 3 ingredients and press into the bottom and 2 inches up the sides of a 9" springform pan.  
  2. Bake at 350 degrees for 5 minutes.  
  3. Beat cream cheese, sugar, and vanilla until smooth.  
  4. Add eggs, pumpkin, and spice; beat until just combined.  
  5. Pour into crust.  
  6. Bake at 350 degrees for 1hour.  
  7. Cool on a wire rack for 10 minutes.  
  8. Run a knife around the edge to loosen and cool 1 hour longer.  
  9. Refrigerate until completely cool. 
  10. Remove sides of pan and serve.  
  11. Garnish with whipped cream.
