Ingredients
- 2 cups of all purpose flour (I’ve used whole wheat flour as well, but the muffins are more dense)
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/3 cup canola oil
- 2 ripe bananas
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions:
- Preheat your oven to 350 degrees.
- Combine flour, baking powder and salt in a medium sized bowl.
- In a separate smaller bowl, combine the sugar and oil followed by the bananas.
- Add the water and vanilla extract to the sugar/oil/banana mixture.
- Combine the wet mixture to the dry mixture, followed by the chocolate chips.
- Spray some cooking spray to 2 sets of 6 muffin pans.
- Add the muffin mixture to the pans. This mixture is just enough to fill each muffin tin.
- Bake muffins for about 20 minutes.
